Nuts provide a good source of calories and fiber, as well as antioxidants. They are a healthy snack which can be helpful for people who are having a difficult time getting enough calories as they undergo cancer treatment. This is a vegan/vegetarian friendly and heart-healthy recipe.

Serves: 4
Nutritional Information: Per Serving (1/4 cup): 194 calories, 19 g fat (1 saturated), 7 g carbohydrate, 3 g fiber, 146 mg sodium, 2 g protein


1 cup raw pecan halves
1 tbsp pure maple syrup
1/8 tsp cinnamon
1/8 tsp cayenne


  1. Preheat a dry skillet over medium high heat.
  2. Add all ingredients to the pan, cook, stirring frequently, until the syrup is caramelized and the nuts are toasted (about 3 minutes).
  3. Cool the pecans on a sheet of parchment paper, separating them as needed. Let the nuts cool completely before eating.
